  1. Shell the fava beans, blanch them in boiling water for 5 minutes. Shock them in cold water then peel the outer shell off. The beans should come out to be about 1 cup (not much compared to the 2 lbs you just bought). Combine the beans, Parmesan, garlic, cilantro, lemon zest & juice, and blend in a food processor. While blending, slowly drizzle in the olive oil. After, add salt and pepper to taste.
  2. Substitutions You can sub cilantro for parsley or basil. Playing with these flavors will give you a tasty results. If using basil, it may taste more like a pesto without nuts or hummus.
  3. Tips These beans are quite labor intensive so get ready to work your hands for a good 30 minutes. I would recommend not using a really flavorful olive oil. The second time I made it, the oil gave it too much of an overpowering fruity flavor. Also, hold the salt until the end, real Parmesan tends to be salty by itself.
  4. Spread this lovely puree over a toasted sliced baguette, it's sure to please your taste buds! If you want to garnish, I recommend using something inside the puree: shaved Parmesan, cilantro leaf, a cooked fava bean, or lemon zest to add color. Enjoy!

  1. Preheat your oven to 425F.

  2. In small saucepan over medium high heat, add blueberries, sugar and lemon juice. Mash blueberries until only a few remain whole. Heat and stir until boiling. Remove from heat and allow to cool and thicken. Set aside.
  3. In a large bowl, whisk together flour, sugar, baking powder, and salt.
 Beat in greek yogurt, eggs, vanilla, milk and melted butter until fully incorporated.
  4. Spray doughnut pan with non-stick spray, filling each cavity with ¼-1/3 cup doughnut batter. Dollop two to three tsp of blueberry jam on top doughnut batter in each doughnut pan cavity. Using a knife swirl the jam into the doughnut batter. Bake in oven for 9 minutes, or until light golden brown.
  5. In small bowl, whisk together powdered sugar, lemon zest, milk and vanilla bean caviar until sugar is dissolved and mixture is runny.
 Dunk tops of doughnuts into glaze and turn right side up to set. Serve while still slightly warm.

Make the Cake
  1. Heat oven to 325 degrees and position a rack in the middle of the oven. Butter and flour a 9-inch cake pan, preferably a springform pan.
  2. With an electric mixer, cream the butter and sugar, then add honey and whip for 1 minute, until fluffy. Beat in eggs one at a time, until well incorporated, then whip for 2 minutes. Stir in grated ginger, candied ginger, and lemon zest.
  3. Whisk together flour, cinnamon, salt and baking powder and add to bowl, mixing briefly to make a stiff batter. Pour batter into prepared pan.
  4. With a paring knife, cut slits in each of the apple quarters on the rounded, outer part of the wedge, slicing partway through at 1/8-inch intervals. Arrange apple quarters slit-side-up over the batter. Sprinkle surface with 1 tablespoon sugar.
  5. Place cake pan on a baking sheet and put on middle rack of oven. Bake for about 45 minutes, or until an inserted skewer emerges dry. (It took about 52 minutes for me) If cake is browning too rapidly, tent with foil until done. Cool on a rack, then carefully unmold.
Make the Glaze
  1. Put sugar, honey and lemon juice in a small saucepan over medium heat, stirring until sugar is dissolved and mixture bubbles, about 2 minutes. Paint surface of cake and apples with warm glaze. Cake will keep for several days, tightly wrapped, at room temperature.

  1. Heat oven to 375 F
  2. Peel zucchini and dice. Add to the bowl of a food processor fitted with the steel blade along with drained and rinsed white beans, Vegenaise, nutritional yeast, non-dairy milk, lemon juice, salt, red chili flake, and black pepper. Process until very smooth.
  3. In a large sauté pan heat oil and sauté onions and garlic until soft, about 5 minutes. Add in spinach and sauté on low until wilted. Strain spinach, pressing out as much water as possible, and set aside. In the same pan, sauté roughly chopped artichokes with lemon juice in the pan juices until soft and edges brown. Add back spinach and sauté 1 minute longer.
  4. With the motor of the food processor running, add in potato flour 1 teaspoon at a time. {The mixture should thicken considerably]. Add the pureed zucchini and beans to the pan with artichokes and spinach. Remove from heat and stir in chopped basil.
  5. Transfer dip to an oven safe casserole pan, drizzle with garlic oil, if using, and sprinkle on pinenuts. Bake for 20 minutes, and broil for 1 – 2 minutes to achieve a golden top. Allow to sit and firm up for at least 10 minutes before serving.

Ripe Tip: By substituting the canned beans and zucchini in place of cheese you save a load of calories, fat and cholesterol in favor of protein, fiber, vitamins and minerals. Serve with your favorite crackers, corn chips, or pita.
